Trout, Glorious Trout
A member of the Salmonidae family which, as its name suggests, includes salmon, trout is a semi-fatty fish whose lipid content varies depending on the time of year. Lowest in winter, the lipid content rises considerably from late spring to early fall. Foodies find that the fattier the trout, the finer the flavour.
Surprise! Fatty trout also makes healthy eating because its fat contains omega-3 fatty acids with proven health benefits, reducing the risk of blood clots and helping prevent heart disease. Trout is an excellent source of vitamin B12 as well as omega-3 fatty acids and protein and provides appreciable amounts of phosphorus, magnesium, zinc, selenium and iron.

Rainbow Trout
Rainbow trout is popular in Western cuisine and is caught wild and farmed. It has tender flesh and a mild, somewhat nutty flavor. However, farmed trout and those taken from certain lakes have a pronounced earthy flavor which many people find unappealing. Kolapore Springs rainbow trout have a fresh light taste, thanks to the clean cool water with an abundance of their natural food source, freshwater shrimp.
By far the most encountered form of trout, these beautiful fish have been stocked in most streams by hatcheries, and have become the backbone of our trout hatchery. Rainbows have glowing rows of black spots on the back, sides and tail. A pinkish (rainbow) band can be found on both sides. This fish is noted for its spectacular leaps and hard fighting when hooked.

Speckled Trout
The speckled or brook trout is a brilliantly coloured fish. It is readily identified by the white leading edge, backed by black, on its lower fins. A true delight to fish for, these generally small fish have a true wild nature. Due to over fishing, and competition with rainbow and brown trout, their range now is greatly reduced. Speckled trout are considered a specialty fish that we are currently raising. They will become available to market in the near future.
Brown Trout
Brown trout are extremely smart and are the most difficult of the trout to catch. These favourites can be distinguished by their brownish-yellow colour with dark and red spots on an olive background. The Brown's square tail has few or no spots. Virtually impossible to catch once they get settled into a stream. Often times, fishermen do not receive as much as a nibble and become convinced that the stream in bare. Brown trout will be available in the future to the pond market.
Tiger Trout
The tiger trout is one of the most mysterious trout that exists. A tiger trout is a cross-breed or hybridization between a Brook Trout and a Brown Trout. What makes it even more unique is the fact is that a brook and brown trout each belong to a separate genus. So even though it's easy for biologists to perform this cross-bredding of the tiger trout, it's very rare that tiget trout occuer in the wild.
