        David Suzuki Foundation Legacy Gala Features Kolapore Springs Trout

        Although in business for only a year and a half, local trout fishery - Kolapore Springs, is making quite a splash!

        On September 10th, Kolapore Springs trout was served at the David Suzuki Foundation's  20th Anniversary Legacy Gala (legacygala.ca at the Four Seasons Hotel in Toronto.  The trout was prepared by Canada's world renown Chef - Susur Lee as part of his "locavore" menu.

        Owners, Sean Brady and Bruce Green were very excited about having their trout included on the menu.  "Our trout are raised to the highest standard of naturally sustainable aquaculture." says Sean Brady. 

        As a donation to the eco-friendly event, Kolapore Springs raffled off a dinner for 6 at the rustic Truite Cafe, in the Kolapore Uplands.   This trout based dinner will be prepared by guest chef, Thomas Bellec, Executive Chef of Toronto's Four Seasons Hotel.  It will prove to be a marvelous culinary experience in a spectacular, natural setting.
